In many cases, less is more. This recipe, developed with the help of Judy Toth from Simply Impressive Cooking School, is a no fail one and, is of course, simple.

  • 2 Tablespoons water

Homemade Caramel Apples

Learn how to make real homemade caramel apples with my success tips, video tutorial, and carefully explained recipe. This from-scratch caramel is buttery, sweet, and if cooked a little longer, is also excellent for soft caramel candies. This festive fall dessert is always fun to make, decorate, serve, and eat!

Fall is in full swing and what better way to celebrate than with a traditional county fair inspired treat?! I originally published homemade caramel apples in my cookbook Sally’s Candy Addiction. There you’ll also find candy how-to’s and recipes including toffee, candy apples, caramels, fudge, truffles, chocolate bark, taffy, and marshmallows. I decided to slightly adapt my original recipe, adding a little more butter and corn syrup for a softer, silkier caramel coating.


Recipe Summary

  • 9 assorted apples, room temperature
  • 1 1/2 cups sugar
  • 1/2 cup light corn syrup
  • 1/2 cup heavy cream, room temperature
  • 3/4 cup coarsely chopped cashews, for dipping
  • Flaky sea salt, such as Maldon, for pressing
  • 2 ounces white chocolate, chopped

Insert a 5-inch dowel or nontoxic twig into the stem end of each apple.

Combine sugar and corn syrup in a medium heavy-bottomed saucepan, and stir. Cover, and cook over medium-high heat until sugar melts. Uncover, and continue to cook, swirling occasionally, until mixture is dark golden, about 10 minutes. Slowly drizzle in heavy cream. Remove from heat, and stir until smooth. Transfer caramel to a small metal bowl. Let stand 3 minutes to let caramel thicken slightly, then dip bottom of 1 apple to test if caramel is thick enough. If most of the caramel runs off of apple, let caramel cool 1 to 2 minutes more, then try again.

Dip 3 apples, including test apple, 1 at a time, into caramel to coat three-quarters of each apple. Let excess drip off, and scrape bottom of apples against the side of bowl (if caramel begins to harden, reheat in bowl over a pot of simmering water). Immediately after coating each apple, dip into nuts, using your fingers to help them adhere. Transfer each apple as decorated to a baking sheet lined with parchment or a nonstick baking mat, and let set completely, about 30 minutes.

Coat 3 more apples with caramel as above, this time pressing each with salt flakes along top edge of caramel immediately after coating. Transfer to lined baking sheet, and let set.

Coat the 3 remaining apples with caramel. Transfer to lined baking sheet, and let set.

Place chocolate in a heatproof bowl set over a pan of barely simmering water. Stir until melted and completely smooth. Fill a small resealable plastic bag with chocolate, and snip a tiny hole in 1 corner. One at a time, hold the 3 plain caramel apples horizontally over baking sheet, drizzle with chocolate in a back-and-forth motion, spinning apple as you drizzle. Return to baking sheet to set, about 30 minutes.

Salty pretzels and tart apples go remarkably well with peanut butter, chocolate and caramel, so we thought we'd bring them all together in one epic flavor bomb. Just roll the caramel-coated apple in crushed pretzels and chopped Reese's cups. Boom.

Apples are especially delicious this time of year, which is why we’ve tried to include all the sweet, crunch-tastic recipes we know. And if you aren’t into making any even slightly time consuming recipes at the campsite, don’t stress! Most of these recipes have preparation steps you can easily do at home before you head to the campsite, saving you time and effort when you’re supposed to be relaxing in nature.

Grab your tent, your Dutch oven, and head for the woods. And don’t forget the kids! Your little ones will have a blast helping with these quick and easy apple creations.


Salted (and Other) Caramel Apples

Melt caramel with cream in a double boiler or glass bowl set over a pot of simmering water. Add vanilla and salt and stir until smooth.

Stick one chopstick in the bottom of each apple. One at a time, dip the apple in the caramel, coating it all the way to the base of the stick. Allow excess to drip back into the pan for a couple of seconds, then carefully roll the apple in whatever topping you'd like. (There's a small window of opportunity for the toppings to easily stick!)

Repeat with all the apples, refrigerating apples as soon as they're coated. Once cool, wrap apples with cellophane or plastic wrap.

Happy week-before-Halloween! My girl and I made caramel apples a couple of weeks ago, and we had so much fun, we&rsquore doing it again tomorrow.

The great thing about caramel apples is, the possibilities are endless. Whether you leave the caramel plain and glossy and beautiful&hellipor decorate it with everything you can get your hands on&hellipthe end result is always individual and special.

And oh-so-delicious, which is the most important part.

Apples! Any variety, any size. I like to give them a good rinse under hot (as hot as my fingers can handle) water, then dry them with a rough dishtowel, rubbing kind of vigorously as I dry them. The wax coating on apples can create problems later when it comes to the caramel sticking, and this seems to help a little bit.

Caramel. You can use the individually wrapped squares, of course, but unwrapping them is grueling and torturous and kills my joy. If you have them available, these caramel melts are so nice and easy. I used about three (11-ounce) bags. Maybe I used four. I&rsquove slept since then.

Note: True caramel apples, of course, are those that involve making your own caramel (with brown sugar or corn syrup or sweetened condensed milk or all of the above). In my caramel-loving opinion, that sure makes for a delicious caramel apple, but if you&rsquore planning on coating the caramel apple with all sorts of adornments, the caramel squares or melts are really just fine. And using a candy thermometer can sometimes kill my joy, too.

You&rsquoll also need toppings. Mini M&M&rsquos are nice and cute and colorful.

I cannot remember the last time I made caramel apples. In fact, I’ve always shied away from chocolate and caramel concoctions in general. However, not this year. My Facebook feed has been full of Caramel Apple fun and I couldn’t resist.

HOW TO MAKE CARAMEL APPLES

  • Twist the stem off each apple and push a craft stick 3/4 of the way through the apple.
  • Freeze your apples for 20-30 minutes before dipping.
  • Microwave the caramels and milk in a microwave safe 4-cup glass measuring cup or bowl at half power in 30 second increments until smooth, stirring each time.
  • Let cool for 1 minute.
  • Dip and spin the apples to coat them, taking care not to leave the apples in the caramel for too long.
  • Allow excess caramel to drip away and dip or coat in preferred toppings and place on wax paper.
  • Harden in the refrigerator for at least 30 minutes.

VARIATIONS ON CARAMEL APPLES

    : You can make your own sea salt caramel sauce at home and, if you’ve already made a batch of my Salted Caramels you can melt them down to dip your apples in or even drizzle it over the top.
  • Toppings: The sky is the limit for what toppings your want to use. Crush up some oreos, toffee, mini m&ms, chocolate chips, pecans, cashews, pretzels, or you can even dust the top with just a little sifted confectioners or brown sugar.

CARAMEL APPLES AROUND THE WORLD

  • “Love Apples”:In Brazil, maçã-do-amor or “apples of love” are served up on feast days for specific saints, especially John the Apostle. They are usually served up with bright sprinkles or other toppings that make them bright and colorful. In France, they are called pommes d’amour (“apples of love”) and they are commonly found at street festivals and fairs.
  • Glasierter Apfel: In Germany, candy apples are served up specifically around Christmas as a sweet, sugary treat for children.
  • Toffee Apples: Across the UK and the United States, Caramel Apples are eaten as a Halloween treat.
  • Independence Day: Candy apples are a traditional treat for Israeli Independence Day during street celebrations.

THE “DO’S” AND “DON’TS” FOR CARAMEL APPLES

  • Boil the apples for just a couple seconds then remove them, this removes the wax layer that is added to apples before they are sold.
  • Freeze your apples for at least 20 minutes before dipping, this helps the caramel set.
  • Prepare all the apples and have them ready to dip before getting the caramel ready.
  • Grease your wax paper you put the apples on.
  • Use a deep 4 cup measuring cup for dipping, this will cover the apples nicely.
  • Microwave your caramel at half power until smooth and creamy, then let it sit for 20-30 seconds before dipping.
  • Have any toppings you’ll be using ready to go before you microwave your caramel.
  • Wrap these apples in any way.
  • Let them sit to harden at room temperature (the fridge is your friend).
  • Handle them too much or push them too deep into caramel, the stick may come out.
  • Re-microwave caramel over and over again, it will become too thick.
  • Use room temperature apples, the caramel will be a mess.
  • Try to dip using the stem of the apples.
  • Try to dip using a lollipop stick.

HOW LONG CAN YOU STORE CARAMEL APPLES?

  • Serve: You should always eat your Caramel Apples fresh. Once you’ve pierced the apple with the craft stick you’ve started the process of the apple rapidly spoiling when left outside.
  • Store: If you keep the Caramel Apples in an airtight container in a refrigerator, Caramel Apples will stay good for up to a week.
  • Freeze: I do not recommend freezing Caramel Apples. You should enjoy them as fresh as possible or straight out of the fridge.

Recipe Summary

  • 6 wooden craft sticks
  • 6 small apples, any variety, stems removed
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 1/4 cup dark corn syrup
  • 2 tablespoons unsalted butter

Insert sticks into tops of apples. Prepare an ice-water bath.

Bring cream, sugar, corn syrup, and butter to a boil in a saucepan over medium-high heat. Clip a candy thermometer to pan, and continue to cook until mixture reaches 245 degrees, 10 to 12 minutes.

Place pan in ice-water bath to stop the cooking. Dip bottom of each apple in caramel. Using a spoon, coat apple halfway to three-quarters of the way up sides. Transfer to a parchment-lined baking sheet, and refrigerate until set, about 15 minutes (or overnight).


Unwrap the caramels and place them in the slow cooker with the water. Cover the pot and cook the caramels on high for 1 to 1.5 hours, or until they are completely melted. Stir frequently to prevent scorching. If you notice any scorching, pour the mixture through a mesh strainer and discard any dark particles.

Put the caramel into a saucepan on low or leave it in the slow cooker (set on low, as well) to keep the mixture warm while you dip the apples. Use caution if children are helping because the crockpot gets quite hot to the touch and the caramel will get hot enough to cause painful burns.

Line a large baking pan with wax paper and butter the paper.

Wash and dry the apples. Insert a popsicle stick into the stem end of each apple.

Dip each apple into the hot caramel and turn to coat the entire surface. Holding the apple above the pot, scrape off any excess caramel at the bottom of the fruit. As the caramel level lowers, use a spoon to help coat the last apples.

Place the caramel-coated apples on the prepared pan, stick-side up.

Coat the lower half of each apple with toppings, if using.

Put the pan with coated apples in the refrigerator until they are thoroughly set.

Delicious Toppings

Once the caramel is partially set on the apples, use one or more of these toppings to give your treat an extra crunch. Use them to throw a decorate-your-own-apple party. Your guests will love being part of making this sweet treat. Once each guest is done decorating, place the apples in the fridge for 20 minutes:

    : Add texture with toasted pecans, walnuts, almonds, or peanuts.
  • Chocolate: Use dark chocolate chips, cocoa nibs, M&M's, Reese's, small peanut butter cups, or any chopped chocolate bar of your choice for a decadent twist on your dessert.
  • Sprinkles: Colorful sprinkles or candy eyes are great toppings for younger guests.
  • CrumbledCookies: Choose any cookie of your liking, from vanilla wafers to snickerdoodles, chop, and apply to give crunch to your apples.
  • Toasted Coconut: Use store-bought coconut flakes or make your own by placing some freshly shaved coconut in the oven for 35 minutes at 400 F until crunchy, stirring halfway.
  • Dried Fruits: Fruits like cranberries, raisins, figs, and dates are a sweet addition.
  • Cereal: Use different cereals like Froot Loops, Cheerios, granola, Cap'n Crunch, or Cocoa Puffs to decorate your apples.

How to Store the Apples
