I have got an electric mini donut machine for my son's birthday and I used an adapted Victorian sponge recipe because I did not fancy the doughnut recipes that came with the machine.

IngredientsMakes: 6 to 12 doughnuts

  • 110g (4 oz) butter
  • 170g (6 oz) caster sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 200g (7 oz) plain flour
  • 25g (1 oz) cornflour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon bicarbonate of soda
  • 1/8 teaspoon cream of tartar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon mace
  • 85ml (3 fl oz) milk
  • 4 tablespoons grape seed oil

  1. Preheat donut maker.
  2. Cream butter and sugar until fluffy and white. Beat in eggs one at a time, then add the vanilla and spices
  3. Weigh dry ingredients and mix together in a separate bowl, then fold into the butter mixture, alternating with dry ingredients and milk and oil until all incorporated.
  4. Follow instructions for your donut maker to bake the donuts. Using a chopstick helps with handling the donuts.

Decorating tip

You can coat these with icing, glaze, sugar-cinnamon mix, chocolate, sprinkles, etc. I make a glaze from the juice of melted frozen strawberries and sugar (that have been left until their juices come out) mixed with icing sugar. I warm the mixture and dip the donuts.

I made this before and I found the dohnuts chewy and too sweet. This time I put 75g of sugar to 125g of flourband they were much nicer-09 Aug 2017

It’s a Monday and I’m posting about donuts. I have a soft spot for donuts.

I could eat them just about everyday if you let me. Like today.

I made these donuts a couple weeks back just because. My daughter woke up and her face lit up like the tree on Christmas morning when I told her that there were donuts in the oven.

Unlike pancakes, which we eat just about every weekend, donuts are a different story… there really aren’t any great bakeries very close to me now in this little town.

And surprisingly there aren’t any chain donut places here either. Weird.

So it’s a rare occasion that we get donuts from the bakery or that I make them here at the house so when I do it’s a treat for the family.

I don’t ever remember eating donuts much as a kid either. Maybe I did. I don’t know.

You become more forgetful after having kids and getting older. Not that I am old yet but… ya know…

Anyway, I do distinctly remember once after having a sleepover for my birthday, my mom asked us what we wanted for breakfast.

Immediately I said, “DONUTS!” so she had my dad drive to the Dunkin down the street and pick up a dozen or so warm, cakey donuts for us girls to enjoy.

It was the prefect end to a fun sleepover with my friends.

So that morning a couple weeks back, I decided to try and surprise my daughter. I had an extra box of cake mix in the pantry and decided to give some baked donuts a try using the cake mix.

What better way to use cake mix than to make some cake donuts for breakfast?

How to make Donuts in A Donut Maker

You can learn from my mistakes. Mistake number one: cut the hole in my bag too big. This caused our mini donuts to have no holes and a few others to be undercooked.

But don’t cut that hole too small either, because then you won’t be able to get the mix out, or will end up squeezing your bag too hard and popping a hold in it.

The great thing about these donuts is you can have a flavored icing you desire, we chose a maple-flavored, homemade, wet/runny enough that I just dipped them in. My version of a Maple Dip from Tim Horton’s.

Mini Doughnuts Recipe Using Cake Mix

Yields about 4 dozen mini doughnuts

Ingredients:
Cake Mix (flavor of choice)
1 Egg
1/4 Cup Vegetable Oil
1 Cup Water
Wilton Candy Melts (color of choice)
Candy Sprinkles

Step 1- Preheat oven to 425 degrees Fahrenheit

Step 2- Place dry cake mix, egg, water and vegetable oil in a mixing bowl

Step 3- Mix until well incorporated

Step 4- Prep your donut pan with cooking spray

Step 5- Spoon batter into a piping bag with a small decorating tip and pipe donut batter into the donut pan cavities

Step 6- Bake for 5-7 minutes, or until the top of the doughnuts are golden brown

Step 7- Allow the doughnuts to cool in the pan for about 2 minutes and then remove with a fork and place onto a cooling rack

Step 8- Place 1 cup of candy melts in microwave safe bowl and microwave in 30 second increments (string in-between) until candy melt coating is smooth

Step 9- Carefully dip the doughnuts upside down into the candy melt, coating the top half of the doughnut, and place on a platter to cool


Old-Fashioned Mini Applesauce Cake Donuts

1 cup flour 1/2 cup sugar 1 tsp. baking soda 1 tsp. baking powder 1/4 tsp. salt 1/2 cup milk 1/3 cup buttermilk 1/4 cup applesauce 2 tbsp. oil 1/2 tsp. vanilla 1 egg white, lightly beaten 1. Preheat oven to 400 degrees. Spray your mini-donut pan with oil or coat with butter and set aside. 2. In a small bowl, thoroughly combine flour, sugar, baking soda, baking powder, and salt. 3. In a large bowl, whick together milk, buttermilk, applesauce, oil, and vanilla. 4. Fold mixture into wet ingredients and stir just until moistened fold in egg white. 5. Add 1 tbsp. batter per mold, leaving the center peg showing above the batter. 6. Bake 10 minutes or until dough springs back when touched with your finger. 7. Remove from oven and cool for 2 minutes, then loosen donuts. While still warm, dip donuts in sugar, powdered sure, or a mixture of cinnamon and sugar, coating well. Or cover with a glaze of 1/2 cup powdered sugar and 2 tsp. milk.

Mini Chocolate Cake Donuts Recipe

Yesterday I spoiled my family with making some Chocolate Cake Donuts. They were such a huge hit that I made them again today. These are super easy to make and your family or friends with think you rock!

Ingredients:

  • 1 1/2 cups of all purpose flour
  • 1 tsp baking powder
  • 2/3 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/3 cup unsweetened cocoa
  • Dash of salt
  • 2 eggs
  • 3 tbsp melted butter
  1. In a large bowl mix flour, cocoa, baking powder and salt.
  2. In another bowl mix your eggs, sugar, vanilla, butter and milk.
  3. Combine egg mixture to your flour mixture.
  4. Spray your donut pan with cooking spray. Fill each donut spot on your pan about 2/3 full and bake at 325 degrees for 8 minutes.
  5. Cool donuts in pan for a few minutes then remove.
  6. Frost the top of your donuts with glaze. To make glaze, just mix the confections sugar and milk.
  7. Enjoy

Donut Glaze

  • 1/4 c melted butter
  • 1 1/3 c powdered sugar
  • 1 tsp vanilla
  • 1 tbsp hot water

Mix melted butter and powdered sugar until well blended. Stir in vanilla. Slowly add hot water and keep blending until smooth.

Pineapple Upside-Down Cake is one of my most favorite cakes, and David’s too. Sadly, though, we could probably count on two hands how many times we’ve each had a piece.

As I was working on the recipe for this post, I thought about why we haven’t had Pineapple Upside-Down Cake much. The answer is pretty simple: in our house, a cake is usually something that we have for birthdays or very special occasions and other cakes tend to always win over the Pineapple Upside-Down Cake.

For David, German Chocolate Cake is ALWAYS the top pick on his birthday.

And then the kids all have their favorites: chocolate chip cookie cake, cheesecake, and others.

Poor Pineapple Upside-Down Cake never stands a chance in our house. So much for being the so-called favorite, huh?

While my Mini Pineapple Upside-Down Cake Doughnuts recipe isn’t exactly the same thing as having a piece of cake (we’re not going to even pretend that they are the same), but they are a fun, very yummy, and a great way to get that Pineapple Upside-Down Cake flavor into a small, hand-held treat.

Rather than frying these doughnuts, they are baked in the oven, so you’ll want to make sure you have a mini doughnut pan. I picked up mine at a thrift store, but you can easily buy a [easyazon_link identifier=”B004CYELQ4″ locale=”US” tag=”homecookingmemories-20″]Mini Doughnut Pan[/easyazon_link] online.

With your mini doughnut pan ready, the first important step is to drain your pineapple VERY well. I used crushed pineapple, which is the easiest, but you could use chunks or even rings, but they will have to be cut into small pieces. Drain the pineapple into a measuring cup, because you’ll need it to make a pineapple syrup.

Filling the mini doughnut pan can be a bit tricky, but to make this easier, I recommend placing the doughnut batter in a quart sized zipper-style plastic bag. Close the bag and then snip off a small bit of one of the corners. This will allow you to squeeze the batter through the hole and into each section of the doughnut pan more precisely.

As with traditional Pineapple Upside-Down Cake, the fruit is placed in the pan before the batter, on top of some melted butter. To add the batter on top of your fruit, squeeze the batter around in circles on top of the pineapple and cherries. Avoid going all the way to the edge though, as this will give the batter enough room to rise and fill in the doughnut well as it bakes.

While your mini doughnuts are baking, you’ll make up a simple pineapple syrup. When your Pineapple Upside-Down Doughnuts are finished baking and have cooled, dip the tops into the pineapple syrup to add even more pineapple flavor and a wonderfully sweet exterior.
