In a saucepan, heat the oil, butter and sauté the finely chopped onion and garlic. We wash the mushrooms, cut them into cubes and put them over the onion and garlic mixture and let them cook for about 5-10 minutes. Stir continuously so that it doesn't stick and then add the chicken soup (water) and let it boil for 10 minutes.
Pass everything with a blender and add sour cream, salt and pepper. Serve with croutons
