  • 1/2 Cup fresh lime juice
  • 1/2 Cup fresh cilantro, chopped

  • 1 Tablespoon olive oil
  • 1 Tablespoon chili powder
  • 1/2 Teaspoon sea salt
  • 1/2 Teaspoon pepper
  • 1 Pound skinless boneless chicken breast

Baked Mustard Lime Chicken

What do you do when you find yourself with a bunch of extra cilantro? For me, I usually make something Mexican. But what if you’re not in the mood for that type of cuisine?

Delicious, easy (definite weeknight dish!) and healthy, too. Oh, and did I forget to mention make ahead…my latest obsession? Yeah, that too.

I think this would be great on the grill too!

Baked Mustard Lime Chicken
from Elana’s Pantry

1 pound skinless boneless chicken breast
1/2 cup fresh lime juice
1/2 cup fresh cilantro, chopped
1/4 cup dijon mustard
1 tablespoon extra virgin olive oil
1 tablespoon chili powder
1/2 teaspoon sea salt
1/2 teaspoon pepper

Combine all ingredients except chicken in a food processor. Pulse until well combined.

Place chicken in a baking dish, pour marinade on top and refrigerate for at least 15 minutes (can be several hours).

Preheat oven to 350 degrees. Bake for about 20 minutes, uncovered. Serve with extra sauce spooned on top.

Combine lemon and lime juices with the prepared mustard. Brush over chicken. Set aside.

Combine bread crumbs, salt, pepper, curry powder, oregano, and grated lemon peel. Roll chicken in crumb mix, coating well.

In a heavy baking pan or iron skillet, melt butter or margarine over medium heat. Place chicken in pan, skin side down.

Place in a preheated 350 degree F (175 degree C) oven. Bake, uncovered, for 20 minutes. Turn chicken and bake until tender, about 30 more minutes. Serve on a warm platter with sliced lemons and chopped parsley, if desired.

Steps to Make This Oven Baked Lime Chicken with Couscous and Broccoli

  1. It&rsquos best if you can marinate the chicken for as long as possible. So ideally this would be done before you leave for work.
  2. Turn the oven on and put the oven tray inside.
  3. Get your chicken breasts wrapped in the foil parcels. Trim your brocolli.
  4. Place the chicken breasts parcels onto the heated tray.
  5. 10 minutes before the end of the chicken baking place 150g couscous in a bowl. Pour over 230ml boiling water and cover the bowl.
  6. Cook your broccoli. Take out your chicken once baked. Rest it for a few moments in the foil.
  7. Serve as per pictures with lime wedges.

One of the easiest weeknight entrées imaginable: Skinless, boneless chicken breasts get a quick sear, then finish cooking in the oven. Serve them with a fast, flour-thickened pan sauce made from chicken broth, white wine, whole-grain mustard, and butter. Make rice pilaf to serve alongside.

Tips for Chicken


  1. 1 Heat the oven to 425°F and arrange a rack in the middle. Season the chicken breasts all over with salt and black pepper.
  2. 2 Set a large, heavy, ovenproof frying pan or cast-iron skillet over medium-high heat. When it’s hot, add the oil and swirl to coat the bottom of the pan. Add the chicken, presentation (i.e., smooth) side down, and cook until browned, about 4 minutes. Using tongs, turn the chicken over and put the frying pan in the oven. Bake until the chicken is cooked through but still juicy, about 6 minutes. Transfer to a warm platter and let sit for about 10 minutes, while you make the sauce.
  3. 3 Return the frying pan to the stovetop over medium-high heat. Add the broth, wine, and thyme sprig. Bring to a boil, scraping the bottom of the pan to loosen any browned bits. Cook for 5 minutes.
  4. 4 In a small bowl, stir together the butter, mustard, and flour to form a paste. Whisk into the liquid in the pan. Cook, stirring constantly with a whisk, until the mixture thickens, about 2 minutes. Remove from the heat and stir in the parsley. Serve the chicken on warmed plates, ladled with the sauce.

The Technique

I wanted to infuse as much flavor as possible in this Baked Tequila Lime Chicken so I threw it in a quick 15 minute marinade to increase the flavor profile. I kept the flavors classic and simple:

  • Fresh lime juice and lime zest. The zest gives the chicken a pop of freshness and the tartness cuts through the fat in the chicken.
  • Jalapeno: The jalapeño was perfect to add a pop of flavor and heat to entice the taste buds.
  • Cilantro: Cilantro makes everything better for me and it adds a ton of flavor and freshness to the chicken.
  • Garlic: Duh…because garlic goes in everything.
  • Scallions: Scallions add the perfect amount of savory onion flavor without the harshness that onions can sometimes give.
  • Tequila: Naturally tequila is so quintessential Mexican. However it also acts as a tenderizer which is much needed when we only have 15 minutes to marinade.
  • Honey: Balances out the tartness of the lime and the tequila.

While I placed the chicken in a screaming hot 450 degree oven, I created our perfectly flaky Mexican Restaurant Style Rice out of a pack of frozen rice I had in the freezer (yea…it’s that easy 10 min to perfect rice. ) And I decided that my chicken needed an additional pop of freshness alongside it.

I created a super fresh and delicious avocado and tomato relish to serve on top of the chicken or alongside it. Either way it is the perfect accompaniment.

While the chicken rested and I fought off my husband and munchkin from tearing into the crispy skin on the chicken, I toasted up some fresh tortillas, sliced up a ton of limes and tore of a nice fresh handful of cilantro.

The munchkin adores avocado and immediately ordered me to pour out all of the avocado relish onto her plate.

Our dinner came together in under an hour and I barely broke a sweat. But thankfully I did make a dent in the Costco collection of chicken courtesy of the hubs.

Taco Lime Chicken Marinate:

This recipe is so simple to make. You only need two ingredients for the marinade.

You can either make your own homemade taco seasoning or just use a packet from the store. I only used the juice from my lime and love the flavor it gives but if you want something more you can also zest your lime and add that into the taste.

Marinate time: For the best results I like to allow mine to marinate overnight. If you want to bake it right away you can do that also. I have before when I was in a hurry but the flavor didn't get through the entire chicken breast like it would if you allow it to marinate overnight.

Mustard, Lime, and Honey Chicken Recipe

I’m sorry. I know it’s been a while since I’ve shared a recipe with you. I’ve been feeling a little overwhelmed with work and family commitments the last little while, but I’m back with this mustard, lime, and honey chicken recipe. I hope you enjoy it. It’s a little bit hot and a little bit sweet, and for once my kids like it!

I mentioned that things have been really busy the last couple of weeks. First we were getting ready for Kay’s birthday celebrations, and now I’m focused on getting everything ready for back to school for both the girls. We’ve been trying to get in as much play time as we can too, knowing that the summer will be over soon and we’ll be back to our regular routine in just a few weeks.

And then I had a couple of late nights out with my BFF when we caught two shows at Theatre Under the Stars. I was surprised and impressed to learn that TUTS has been performing every summer for the past 75 years! We saw both Hairspray and Oliver! and ended up staying out until almost midnight. That’s like 3:00 am in pre-kid time!

Anyway, on one of those days, I realized pretty late in the day that I would still need to feed the kids. Weird, right? After doing the dreaded last minute rummage in the fridge and pantry, I realized I didn’t have all the ingredients I needed for any of my usual recipes, so it was time to experiment with whatever I could find. It’s like a mom version of Chopped!

Lately the girls have been extra picky about eating dinner, so I thought I’d try something inspired by one of their favourite restaurant meals. This chicken dinner is a grown-up version of the chicken strips with honey mustard sauce my kids love so much.
