can (11 oz) Pillsbury™ refrigerated French bread
cooked chicken breasts, cubed
jalapeño, finely diced
cup fresh cilantro leaves, chopped
Salt and freshly ground black pepper
Heat oven to 350°F. Bake French bread according to package directions. Allow to cool 5 minutes, then cut into 1/2-inch slices.
Heat a grill pan or outdoor grill to medium. Lightly brush each piece of bread with olive oil. Grill bread slices until grill marks appear.
Mix diced chicken, tomato, avocado, jalapeno, cilantro, the juice of one lime and 2 tablespoons of the olive oil in a large bowl. Season with salt and pepper.
Top grilled bread slices with chicken mixture and serve.

Spicy Grilled Chicken Bruschetta - Recipes
I don’t know about the rest of the country, but the weather has been positively diabolical this spring here in the DC area. It was totally frigid last week, even snowing a little one day, then on Monday it was nearly 90°. Tuesday it was in the 50’s and rainy. Wednesday sunny and gorgeous. Hot or cold…which one will win? It’s like the Republicans and Democrats duking it out on the federal budget. I don’t pretend to know much about politics or weather, but one thing I know is that grilled chicken will reign victorious in our house any day of the week…rain or shine. Democrats, Independents, and Republicans will all agree that this bruschetta topping on perfectly tender grilled chicken is the sure-fire answer to world peace. Or at least to dinner-time peace. Enjoy!
4 small boneless, skinless chicken breast halves
1/2 cup + 2 Tbs. sun-dried tomato salad dressing, divided
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil
1 tomato, finely chopped
Directions: Marinate chicken in 1/2 cup sun-dried tomato salad dressing for 20+ minutes.
In a small bowl, mix together the cheese, chopped basil, chopped tomato, and 2 tablespoons sun-dried tomato salad dressing. Set aside.
Grill chicken and just before removing from heat, place the tomato/cheese mixture on top of each chicken breast.
Heat until cheese is just melted. Serve immediately. Makes 4 servings.

What is Bruschetta Chicken?
Bruschetta in Italian is actually an antipasto consisting of grilling bread, rubbing it with garlic and topped with olive oil and salt. Tomatoes and other toppings are often added like this simple tomato topping I used on my grilled chicken. This recipe takes a classic Italian appetizer and turns it into a main dish.
The tomatoes are the star of the show. To quote my husband “you could serve this over cardboard and it would be good!” We love it in the summer when tomatoes are ripest, serve this with some crusty bread to soak up the juice if you wish, or just have it over a great big salad.
What To Serve With Grilled Bruschetta Chicken
To make this a full meal I served it up with some asparagus and couscous (or a gluten free alternative like quinoa, wild rice, or lentils if you want to keep things gluten free!).
Asparagus is a great vegetable for grilling but any vegetable like green beans or Brussels sprouts will work.
Grilled chicken is great paired with a fresh summer side like Marinated Tomato Salad, Fresh Pea Mint Salad and Mediterranean Potato Salad.
For a Mediterranean appetizer this Kalamata Olive Tapenade or Grilled Mushroom Tapenade are delicious choices.
Add your side of choice to a plate and top it with the grilled chicken.
Add a heaping amount of the bruschetta on top of the chicken and a grilled vegetable alongside it. Feel free to add some cheese to the chicken while it’s grilling or top the whole thing with Parmesan cheese.
Sprinkle the Grilled Bruschetta Chicken with some more basil. This meal feels kinda gourmet but it's easily whipped up on the grill!
