This Thai snack puts a unique twist on ice cream

Rolled ice cream is made by freezing the ice cream to order on an anti-griddle.

With summer on its way, it’s time to start thinking about the best summer treat of all: ice cream. While a bowl filled with a couple scoops of Breyer’s and some sprinkles is well and good, there’s a spin on ice cream that began to take the country by storm last summer, and it’s primed to enter the ice cream pantheon this year: rolled ice cream, a popular Thai snack that’s just making its way stateside.

Here’s how it’s made: You choose your ice cream base and add-ins, and the liquid ice cream is added to an anti-griddle, which is like the opposite of a hot plate, chilling anything that touches it down to -4 degrees F. Then the toppings are mashed in, and just as it all begins to freeze, it’s spread into a thin layer, which is then rolled up and added to a cup. More toppings can then be added.

Because if its Thai influence, we’re seeing creative flavors like lychee, dragon fruit, red bean, and green tea, but the flavor and topping options at most of the shops are seemingly endless. When you see a rolled ice cream shop open near you this summer, don’t be afraid to check it out!

Happy surprise, this is so not that. It’s shaved ice taken to the next level (or like the next million levels)! It’s super thoughtful and fun! Once you choose your shaved ice flavor (I went with their, at the time secret menu item, an Intelligentsia based coffee flavor) and then get toppings galore. Here’s the kicker that makes them extra special, they don’t just dump on toppings, they decorate with them! Now, we’re waiting with baited breath and fingers crossed for a champagne flavor!

There are flavors—Kick'n Ranch, Yella BBQ, Cinna-Maple, Buffalo Blue or Traditional BBQ. Just like an ice cream cone, bite on in cause this coup, my friends, is fork free! Happy surprise, this is so not that. It’s shaved ice taken to the next level (or like the next million levels)! It’s super thoughtful and fun! Once you choose your shaved ice flavor (I went with their, at the time secret menu item, an Intelligentsia based coffee flavor) and then get toppings galore. Here’s the kicker that makes them extra special, they don’t just dump on toppings, they decorate with them! Now, we’re waiting with baited breath and fingers crossed for a champagne flavor!

Then there’s their decadent speculoos bar that is—you know what, just get it, it will for sure make your day! Somehow this shop has been around for years without me knowing about it, don’t make my same mistake, get there, ASAP!

Obsessing over these little Russian bite sized dumplings! Fan faves are lamb and feta, potato and mushroom, Nutella, and blueberries and cream, amongst others.

Thai rolled ice cream is equally as fun to eat as it is to watch being made. Every serving is individually hand made-to-order on what looks like a crepe griddle that instead of being piping hot is freezing cold. If you watched my instastory, you saw this! Your milky soon-to-be ice cream is poured onto this griddle, spread out, cooled and scraped into rolls. Some of my fave flavors include Thai Iced Tea and Matcha. FYI, the very best part is that there is no difference in charge between one topping and twenty! So get loaded!
