Steam Sterlet Preparation:

Step 1: Prepare the ingredients.

I bought ice cream sterlet and the first thing I did was set it to thaw at room temperature. Then we thoroughly rinse it under cold running water, make an incision along the abdomen, remove all the insides and rinse again. Then quickly peel the parsley root and carrots, and onions, wash them thoroughly and chop them randomly.

Step 2: Cook the steam sterlet.

We put on a slow fire to warm up a wide pan, a little grease it with vegetable oil. Now we transfer the clean fish to the pan and fill it with white wine and water. Spread chopped vegetables (parsley root, carrots and onions) on top. Immediately salt and pepper to taste and cover with a lid. In this form, over low heat, we steam fish within 20-25 minutes. In this case, it is necessary to periodically check the presence of liquid in the pan and add wine and water as necessary.

Step 3: Cook the side dish.

While the sterlet is steaming, you can start preparing a side dish for it. To do this, quickly peel the potatoes (preferably young), then wash it under cold running water. We shift it into a saucepan, pour it with drinking cold water and send it to boil over medium heat until it becomes soft (about 15 minutes) In the end, do not forget to salt to taste. After which we drain the water from the potatoes.

Step 4: Serve the steam sterlet.

We transfer the prepared sterlet to a plate. Spread some boiled potatoes next to them and sprinkle with finely chopped dill and parsley. Open the bottles of white wine and dinner is ready. Enjoy your meal!

Recipe Tips:

- Of course, instead of a whole fish, you can buy already peeled fillet.

- - To give the dish a more juicy taste, sprinkle the prepared sterlet with lemon juice.

- - Garnish for such fish can be prepared any: boiled potatoes, baked potatoes, vegetable salad, etc.
