Cooking eggplant with cheese:

Step 1: prepare and cook the chicken breast.


First of all, we prepare 1 part of raw chicken breast, rinse it under cold running water from any kind of pollution, put it on a cutting board, cut off the hymen and cartilage from it.

Then we put the chicken meat in a small saucepan, fill it with clean water, so that it is 3-4 cm higher and put the container on a stove that is turned on to a medium level. When the liquid boils, add salt to the pan to taste and cook the chicken until cooked, this process will take approximately 30 - 35 minutes.

After the required time has passed, remove the boiled meat from the pan with a slotted spoon, transfer it to a deep plate and cool to room temperature.

Step 2: prepare raw eggplant.


While the chicken cools, we select two large and very beautiful eggplant. Using a knife for cutting raw vegetables, we cut off the stalk from each and wash them under cold fresh water from sand and any other contaminants.

Then we dry the eggplants with paper kitchen towels to prevent excess moisture, place them on a cutting board one by one and cut into layers up to 5 - 7 millimeters thick. Then sprinkle each layer on both sides to taste with salt, you should not be zealous, do not forget that salty cheese is included in the filling. We put the eggplant in a deep bowl and leave it in this form on 20 - 25 minutes.

Step 3: fry the eggplant.


In 20 - 25 minutes dip the eggplant with paper kitchen towels, getting rid of excess salt and vegetable juice. We turn on the stove to a medium level and put on it a large pan with 50 milliliters of vegetable oil. When the fat is slightly warmed up, we send the first batch of eggplant layers to it. Fry them on both sides to a light, golden, almost invisible crust and complete softness. Attention: their texture should be soft and soft, it’s not worth it to fry the eggplant until the crunch, otherwise the rolls will break during formation!
We put the fried layers on a paper kitchen towel and allow the paper to absorb the excess fat. In the same way, fry the remaining vegetable layers. After we put the eggplants on a large flat plate and let them cool to room temperature. We do not drain the oil from the pan after frying, just put the container on the side for a while!

Step 4: prepare the filling.


Wait until the eggplants have cooled, is not worth it, immediately proceed to the preparation of the filling. We take 200 grams of hard cheese, cut off the paraffin crust and rub on a fine grater directly into a deep bowl. Then we put the boiled chicken fillet on a cutting board, cut it into a cube until 7 mm and send the slices into a bowl of cheese. We drive there 1 chicken egg without shell, add 1 teaspoon of French herbs, black pepper to taste and if you need a little salt. Mix with a tablespoon until smooth, the filling is ready!

Step 5: we form rolls.


After the eggplants have cooled, put 1 vegetable layer on a cutting board and put 1 tablespoon of the filling on one of its edges.

We turn the eggplant tight roll.

In the same way, we form the remaining rolls and put them on a large flat plate.

Step 6: prepare the batter and prepare the breadcrumbs.


Now we drive 2 eggshell eggs into a bowl and beat them with a whisk until splendid. After that we add 1 tablespoon of sifted wheat flour to them, salt to taste and mix again until a homogeneous consistency without lumps - this is a batter. Pour 100 grams of breadcrumbs into a separate deep plate and proceed to the final stage of cooking.

Step 7: bring the dish to full readiness.


We turn the stove on to the middle level and put on it the same pan on which the layers of eggplant were fried. Add the remaining oil and heat the fat to 160 - 170 degrees - the approximate temperature of the deep fat. When the oil is heated, alternately dip the roulettes first in the egg batter, then roll them in breadcrumbs and gently lower them into the heated oil. Fry them from all sides to a light brown blush, periodically turning from side to side with a kitchen spatula and fork.

Then we transfer the rolls to a large flat dish and send the second batch of this yummy to the pan. When all the rolls are ready, serve them to the table.

Step 8: serve the eggplant with cheese.


Eggplant with cheese is served hot as a separate main course or cold as an appetizer. If you have chosen the first option, then each portion of rolls can be supplemented with sour cream, homemade cream or mayonnaise.
