How chefs would spend their ultimate vacation

We all have one — an ultimate dream trip. If you could drop everything (except a big bag of money) and head to the airport, where would you go? Money is no object, nor is time off from work or school. Whether it’s waking up at a winery in Italy or navigating the bustling streets of Tokyo, one man’s dream trip could be another man’s headache. There are no compromises here, no travel restrictions, and definitely no pesky visa issues.

When our chefs proverbially closed their eyes and pictured a dream holiday, some saw cooking in far-off regions and some saw a beach with only remote access. Most of their trips found them eating their way through areas both familiar and strange and still others dreamt of a “working” holiday, collaborating with friends in another country’s food scene.

L.A.-based chef Neal Fraser would spend time cooking in Spain before eating in Copenhagen, while chef Angelo Sosa would learn the secrets of Mexican cooking in Oaxaca. Chef Jonathan Waxman would pack his bags for a wine-soaked tour of Auckland and Hawkes Bay — with some fishing and relaxing mixed in. In the afternoon, take a train ride through ancient caves to admire 15,000 year old artwork. After checking into your Perigord accommodations, enjoy a bit of relaxation by the pool before dinner.

ROCK HOUSES AND FOIE GRAS

Start the day with a visit of an astonishing medieval castle built into the façade of a cliff in the 14 th century. After a stroll in the town where the first Cro-Magnon remains were discovered, continue onto a cave village that thrived from medieval times until the 19 th century. End the day with a goose farm visit and foie gras tasting.

CAVERNS AND CLIFFS

Take a river boat ride through caverns 110 yards below the surface in France’s first underground natural heritage site. After lunch, explore the extraordinary village of Rocamadour, an important pilgrimage site since the 12 th century, perched on the side of a limestone cliff. On the way back, visit an artisanal cheese producer.

LASCAUX AND A CASTLE LUNCH

Visit the world-famous site of Lascaux and see why one of the caves is known as the Sistine Chapel of Prehistory. After lunch in a 17 th century castle and a tour of its private collections, take a stroll through two picturesque medieval villages with unique churches.

A CHÂTEAU AND LIQUEURS

Discover one of the “jewels of Perigord”, a Renaissance-style château with beautiful views from its classic French gardens. In the afternoon, visit a liqueur distillery that has been in the same family for 180 years, and taste their famous walnut liqueur. After touring a medieval village built entirely of red sandstone, end the day at a small restaurant known for its delicious local cuisine.

MEDIEVAL TOWN AND A FORTRESS

Take a walking tour of the town of Sarlat, a spectacular example of 14th century France. After a stroll through a farmers’ market, discover the history of a great defensive fortress, a testament to the instability that wracked this region during the Hundred Years War and the Wars of Religion. End the day at a castle famous for its eerie legend.

LIMOGES AND PARIS

Set out this morning for Limoges and a tour of the famous Bernardaud porcelain factory. After lunch travel by train in First Class back to Paris for a river boat ride on the Seine, a memorable farewell dinner, and a night at the hotel before you journey home.

TRAVEL DAY

After breakfast we say Au revoir to our guests, and wish you a pleasant trip home or journey onward.
