Gluten Free Peanut Butter Cookies

A few weeks ago, we attended the Celiac Foundation national convention in Winnipeg. While a lot of the booths were samples of gluten free foods, there were also booths set up that were selling gluten free cookbooks. I didn’t want to buy any of the books, since I hadn’t reviewed any of them, or looked any of them up online before going to the food faire. However, once I got home, I decided to check up the chef that had been doing demonstrations during the weekend, and was selling his cookbook at the food faire. His name is Brent Stoesz, and he is The Gluten Free Chef. On his website, he has recipes that you can try from his cookbook, The Gluten Free Chef Cooks What You Crave. I decided to try his peanut butter cookie recipe, and I have to say, they were very, very good. I think I may have over-baked mine a little bit, so next time I’ll be sure to watch that more closely.

Chocolate Flourless Cake

This is a mouthful of a dessert. I know it&rsquos not as decadent looking as the Peanut Butter Chocolate cake or the Brownie and Ice Cream Tower, but this cake stands tall on flavor. Don&rsquot let the Gluten free aspect of this dessert fool ya. You aren&rsquot missing any flavor from it at all. The dense chocolate cake is amazing then it&rsquos topped with lightly sweetened chocolate whipped cream and then decorated with some chocolate mocha meringue bark. All of it&rsquos naturally gluten free and you don&rsquot have to worry about rice flour, tapioca, or an expensive flour substitute.

You&rsquove gotta love dark chocolate to enjoy this cake. It&rsquos was not a sweet and fluffy cake. There isn&rsquot much air in this cake and there is no leavening agent to make it rise while baking. Just be sure that whatever air is incorporated into the eggs that it isn&rsquot deflated too much by over-mixing the batter. FOLD the batter over until the cocoa powder is combined, then stop.

This amazing chocolate flourless cake is simply delicious. All of the cake, frosting and meringue is Naturally Gluten-free. It is rich and dense but the whipped cream frosting is light and fluffy. We enjoyed the added crunch of the meringue.

Are you gluten free, or have been considering going gluten free in your home? The holidays can be a very difficult time for anyone with food allergies, or sensitivities, especially when you have to avoid gluten. Gluten seems to be in every cake, cookie and treat at Christmastime.

Every party, or event is full of Christmas cookies and gluten filled desserts. It can be overwhelming and even depressing, but it doesn’t have to be. Thankfully, there are lots of wonderful gluten free Christmas cookie recipes that actually taste really good. Long gone are the days of gluten free cookies that taste like cardboard!

I have been gluten free for one year and 1 month, not that I am counting or anything! This will be my second Christmas being completely gluten free. This will also be my first year eating desserts at Christmastime. Yes, I did not eat any desserts last Christmas other than some candy canes and dark chocolate peppermint bark I made myself. I definitely didn’t get the opportunity to eat any Christmas cookies either. I was too overwhelmed and afraid to eat the wrong thing and just didn’t have time to search out recipes, so it was easier for me to not eat it.

My gluten free journey began two weeks before Thanksgiving of 2018. I had finally had enough of the horrible chronic hives and blistering rash I had been fighting for 6 months and could not be rid of. It was debilitating, and I was a mess. Something had to change fast! After meeting with a naturopath we decided that the first thing I needed to do was to eliminate gluten for 6-8 weeks and monitor my rash. I wanted to wait until after the holidays because I knew how hard it would be to make such a huge change during that time. Yet I knew if I didn’t start as soon as possible, when would I ever take the plunge?

So I did it and it was literally life changing. After about 3 weeks the itchiness subsided and my rash slowly started to go away. The hives and blisters were healing before my eyes without the use of steroids , and in less than 2 months my skin was completely cleared up. It was truly a miracle. If I try to reintroduce gluten I start to get itchy and hives start to appear. I never want to deal with that pain and mess ever again so I am truly committed to the gluten free lifestyle.

Now I am confident in my ability to stay gluten free and to not be tempted to eat treats I can not have. I felt it was time for me to branch out. This year I want to start creating my own gluten free Christmas cookies that I can enjoy this holiday season. I have asked friends and scoured the internet for some of the best gluten free christmas cookie recipes to share with you. I can’t wait to try these out!

The homemade vanilla whipped cream is the perfect finishing touch, and since it is made in a springform pan, the pie can show off its beautiful orange hue.

Start by preheating your oven to 180°C.

Grease and line a medium brownie tray, or experiment with a bundt tin, or if you’re without either try a cake tin.

Melt the vegan butter in a small saucepan on low heat and add into a bowl with the coconut sugar, and cacao powder. Beat the eggs and pour them into the bowl, mixing slowly. Add your ground almonds, baking powder and vanilla extract. Mix until a smooth batter is formed. Finally stir in the raspberries and most of the flaked almonds.

Pour the brownie batter into your tray or tin, and scatter the rest of the flaked almonds on top.

Place in the oven to cook for around 25 minutes or until just cooked. Insert a knife into the brownies to test, you’re looking for a sticky brownie but the mixture should not be runny. Let cool before cutting your slices. Enjoy!
